Planning my first Korea trip in 2026 — where should I start?

I am starting to plan my first trip to South Korea in 2026 and would love a little direction from experienced travelers. Which season would you choose for a first visit, and how many days would you set aside for Seoul versus other cities? I am especially interested in food, neighborhoods, markets, and a few easy day trips. Any planning mistakes I should avoid?
